Fish is one of the Main Recipes chosen in the Headquarters to start a run. The initial Blue Fish and Pink Fish require no preparation other than cooking. 
Mains Cards introduce a variety of more complex Recipes.
At the start of every day, the contents of each Fish Provider in the restaurant is picked randomly from all acquired Recipes. Since players begin a run with two Fish Providers, and two Recipes ( Blue Fish and Pink Fish), customers will initially choose from the same two options every day. However, as Mains Cards are acquired, and the number of Recipes begins to exceed the available Fish Providers, the menu will vary on a daily basis.
Each 
Fish Selection Card does not introduce a new Recipe, but instead grants an additional Fish Provider, increasing the number of daily menu options. One copy can be picked after taking Fish Fillet, and the other after Oysters.
